As a Wakuden establishment, Itsutsu embraces their 'soba and cuisine' motto while specializing in seasonal dishes. Soba is made into thin noodles, using only the smallest amount of binder and well water from Daitoku-ji Temple. The chef doesn’t brace the noodles with cold water, so the flavour jumps to the fore. Similarly, soba dipping sauce is mild, based on its salt flavour. At lunchtime, the three-item set with soba is recommended. Mackerel sushi is a popular à la carte item.
