Savvily prepared, artfully plated dishes, coupled with thoughtful service, capture the quintessence of French fine dining. "L'oursin d'Hokkaido" (sea urchin on a bed of prawns) packs a serious umami punch. The kitchen also prides itself on exclusive dishes crafted with caviars of varying brininess and age, accentuating the sweetness of razor clams, red prawns and the like.
