Enjoy the sun-drenched fare of Thomas Yvan as he shines the spotlight on produce from the Alpilles and Camargue: cod brandade, crushed tomatoes and pistou; Mediterranean gilt-head bream, velvety mashed green peas, parsnips and Noilly-Prat sauce; raspberry mousse and sorbet and pistachio almond cakes.
