MICHELIN Guide's Point Of View

La Condesa, a district of Mexico City, has lent its name to this restaurant run by Indra Carrillo. The Mexican-born chef came to study at the Lyfe (formerly Paul Bocuse) Institute, before working in top establishments such as Le Bristol and L'Astrance. Trained by MOF chefs, notably in fishmongery and bakery, he has also worked in Japan. Although his techniques are purebred Gallic, his inspiration is more multicultural than simply Mexican. A chic, pared-back vein depicts the interior.
