The subtle, niftily crafted repertory showcases regional produce: Projan squab, Lucq-de-Béarn mushrooms, Bahus-Soubiran lemon, Poey-de-Lescar pepper… Intelligent surf and turf combinations and generous helpings add the final touch to this epicurean portrait.
