Head for the Flesborg Fjord, and at the water’s edge you’ll find this early-20th-century villa boasting a cosy bar, parquet floors and light wood furnishings. After almost a decade working at Henne Kirkeby Kro, British-born Paul Proffitt set upon his own in this most idyllic spot on the opposite side of south Jutland; book a space in the glass-cubed ‘Doris’ to watch him up close. Modern cuisine marries local produce and a little playful childhood nostalgia, in dishes such as dripping served with a buttery brioche, aged dairy cow tartare or a surf 'n' turf of sirloin with oyster cream.
