Head east towards the coast and you’ll find yourself in a rural setting that plays host to this old farmhouse on the Taju Estate. Hiis translates as ‘secret grove’ or ‘holy site’ and, along with the forest and garden, the restaurant operates as a collective dedicated to the health and wellbeing of others. Here, Daanius Aas offers a 15-course menu of ingredients foraged from the surrounding land, as well as lesser-used cuts of meat and fish, to just six tables. Creativity leads the way, with detailed techniques used to capture the best flavours and textures, and childhood memories also coming into play.

"We use local, seasonal produce and follow the principles of a circular economy by reducing waste and supporting small businesses. Herbs and vegetables are grown in our garden; our 'waste' style of brioche is made for us by a local baker and the restaurant interior is created from fallen branches."
