Ah, Sologne! A region of fish-filled lakes, poetic mists, deer bellowing in the depths of its forests inhabited by wildlife… and its châteaux – like this one – a gorgeous architectural gem set in sumptuous grounds that has stood since the Grand Siècle. The dining room still has vestiges of its era, with its marble fireplace, mirrors, mouldings and Versailles parquet flooring. When it comes to the classics featured on the menu, they are given a new spin by chef Romain Matura (Le Moulin de la Gorce, Le Skiff Club), who makes good use of spices (turmeric, saffron, galanga), aromatic herbs (basil, purslane, tarragon) and various citrus fruits.
