Vegetables from Val de Saire, lamb from Tatihou, shellfish and fish from a fishmonger in Saint-Vaast-la-Hougue, poultry from La Glacière and herbs from a Cotentin farm jostle for position on an à la carte menu that changes every two weeks. Each plate is a demonstration of the pleasure the chef takes in cooking (sea bream, fennel and coconut; sea bass, leek and parsley) and his partner's joy in providing attentive service.
