The menu features dishes such as turbot from the Cantabrian Sea, Galician clawed lobster, grilled wild spiny lobster from the Balearics, Barents Sea king crab from the restaurant’s own nurseries, and mature beef and ox ribeye. Here, everything revolves around fire, smoke and the grill – the essence of Basque cooking – along with an à la carte that includes delicious stews (Marmitako Lecanda, Fabada Fina de Asturias made with fresh fava beans, fighting bull oxtail etc) and is centred around the best seasonal ingredients.
