Located at the foot of the tower of the cathedral, Demo’s contemporary ambience comes as a pleasant surprise in this historic quarter of the city, thanks to its white decor and glass ceiling with wood beams that resemble the branches of a tree. Chef Pepe Morales’ cuisine is very much inspired by market availability and the traditional flavours of Murcia, as evidenced by dishes such as the hake salad, the torrezno (fried pork belly) with a sweet potato parmentier, Demo’s artichoke, and cod pilpil. The chef is also more than happy to provide advice on the best wine pairings for you.
