In this small Pyrenean town, everyone is talking about La Cuchara de Ruba, a restaurant with the sole aim of perpetuating the legacy of Ramón Ruba, a leading name in the local hospitality sector. It could be viewed as the younger sibling of Vidocq (in Formigal, part of the Sallent de Gállego municipality), as chef Diego Herrero has brought his own cuisine here while respecting, to a certain extent, the essence of the erstwhile Casa Ruba. In the simple dining room, with its highly informal service, the menu (which changes almost every day) is contemporary in style and based around recipes from the Upper Aragón region. Signature dishes include the Pedrosillano chickpea stew, Iberian ham pancetta croquettes with organic chicken broth, and the highly surprising Oliván trout with pil pil and sautéed vegetables.
