MICHELIN Guide's Point Of View

This gastronomic restaurant, part of the Santa Ana boutique hotel in Tudela, is the latest venture of award-winning chef Ramsés González. This small, unique eatery, occupying a medieval wine cellar, is striking for the rustic feel of its stone architecture. It only has four tables, and its cuisine follows to a certain extent the successful cuisine offered at González’s Cancook restaurant in Zaragoza. Here, the dishes on offer also bear his signature and are brought to the fore by resident chef Mateo Sierra, who is something of a celebrity in his own right, having reached the final of MasterChef. The single tasting menu champions locally sourced, seasonal ingredients in dishes such as the Menestra from the Ribera del Ebro, the delicious baked onion, plus an unusual smoked “chuleta” that is in fact a pepper stuffed with delicate shavings of ham. On the first floor, which provides access to a roof terrace with views of the town, you’ll find a more informal tapas space called Rambar.
