Today's culinary landscape is characterised by a shift towards plant-based, zero-waste dishes underpinned by long-established techniques such as fermentation and pickling. At Restaurant Vannu, Gijs Kemmeren gives his creativity free rein, incorporating all those sustainable elements into a multi-course set menu. With seaweed, for example, he adds nuance to the earthiness of beetroot and fresh celery. He also whisks up an intensely flavoursome chanterelle sauce to tie together al dente vegetables and a millet polenta cake. His cuisine is sophisticated, playful and certainly intriguing. "Restaurant Vannu bridges the gap between established tradition and the future. We serve a plant-based set menu determined by what we can source from various local market gardens and our food forest. So, we have made a conscious decision to use ingredients that thrive in the Dutch climate. Our mission is to think carefully about how we handle them and how not to create unnecessary waste. When you are close to your produce, this pretty much comes naturally."
