The square farmstead, in which chef Sang Hoon Degeimbre works his magic in the kitchen of the high-flying L’Air du Temps (evenings only), is also home to a country chic bistro (open for lunch only). Meals are served beneath a canopy of greenery or alfresco in fine weather. Chef Denis has adapted the house DNA into bistro recipes. The result is a cornucopia of bold associations and an abundance of veggies, Asian influences and innovative techniques. For example, the chef may pair pork belly with a frothy espuma of potatoes and coffee, salty caviar and spinach leaves with a subtle olive vinaigrette. Ideal for a bistro meal with a difference!
