Housed within a small boutique hotel on the edge of the Old Town is this elegant restaurant where the old and the new combine: part of the medieval city wall runs down one side of the room, yet it also has a contemporary, design-led style. Âme is French for ‘soul’ and, while the appealingly understated dishes certainly have a French heart, flavours are also drawn from around the globe. They describe their cooking as ‘dishes that feed the soul’; opt for the tasting menu to sample a range of these dishes, such as grilled Norwegian langoustine or wafer with coffee cream and lingonberries.
