For example, he gives perfectly pan-seared cod an exciting twist with various textures of cauliflower and grey prawn. Chef Van Santvoort likes to add a vibrant kick of acidity to his dishes and deftly plays with sweet undertones. This elevates top-quality ingredients like turbot and langoustine to a whole new level.
