MICHELIN Guide's Point Of View

Set in the shadow of the Royal Danish Theatre, à terre is built on family and friendship. It was created in homage to Jean-Louis Le Lay, Chef-Owner Yves’ father, and his spirit lives on in the friendship between Yves and Chef Nicolaj Køster, his close friend. The tasting menu sees global influences added to a classical French base, with good quality ingredients underpinning pared-back, boldly flavoured dishes. Presented alongside each course – maybe a buckwheat galette or brill fried on bread – is a card explaining the recipe’s origins, the ingredients and the chef’s emotional connection to the dish.
