Situated in one of the region’s most famous and romantic hotels, the Bellevue Hotel & Spa (2 Michelin keys), this small gem of a restaurant has just five tables, two of which overlook the valley dominated by Gran Paradiso. Here, the Tuscan chef focuses on specialities from the Aosta Valley, including dishes such as char and venison. After the main course and before the delicious desserts, Roberto from Bergamo will tempt you with his excellent cheese trolley (especially regional cheeses). Front of house, skilled maître-d’ Pietro, from the fifth generation of the family owners, and renowned sommelier Rino (a previous winner of the “Passion for Wine Award”) ensure that guests enjoy their dining experience to the full. The extensive wine list, which now includes unusual labels from countries such as Japan and Turkey, continues to impress and amaze.
